* PEAR AND GORGONZOLA SALAD

BALSAMIC SYRUP
2 tablespoons extra virgin olive oil
2 shallots, minced
1/2 cup Balsamic vinegar

DRESSING
1/2 cup extra virgin olive oil
2 tablespoons sherry
1 tablespoon honey
1/3 cup Balsamic vinegar
Salt and freshly ground black pepper to taste

INGREDIENTS
3 pears
Juice of one lemon
1/3 cup walnuts
3 tablespoons powdered sugar
1/2 cup vegetable oil
4 cups mesclun mix
1 (4-ounce) slice Gorgonzola cheese, cut into small cubes

THE PREPARATION:

For Balsamic syrup, warm olive oil in a sauté pan over medium heat and sauté shallots until translucent. Add Balsamic vinegar and reduce to a syrup consistency.

For dressing, place olive oil, sherry, honey and Balsamic vinegar in a blender. Season to taste and blend until smooth and emulsified. Allow to rest.

Slice pears lengthwise, remove core and sprinkle with lemon juice.

Toss walnuts in sugar. In a small frying pan, heat oil over high heat and fry walnuts for 2 minutes. Drain and place on paper towels.

In a bowl, mix mesclun with 1/4 of the dressing. Toss well.

On chilled plates, arrange the mesclun, sliced pears, cheese, and top with walnuts. Drizzle with Balsamic syrup.

Serves 6.

CULINARY NOTES:

Place the Gorgonzola in the freezer for 10 minutes prior to cutting. It will be easier and less messy to cube.

Balsamic vinegar is not made with balsam, but is a reference to the fact that it is thick and syrupy. The process of making Balsamic vinegar starts by boiling unfermented grape juice to concentrate the flavors. The extract then has Mother of Vinegar added to it and the fermentation process begins. (Mother of Vinegar contains yeasts and Acetobacter bacteria. These bacteria convert the alcohol and sugar into acetic acid or “vinegar’)

The vinegar is then aged for at least 12 years in a series of barrels made from various types of wood including oak, chestnut, mulberry and juniper.
